Norway call themselves the milk and bread nation. We love those two. And it's a pitty, since we have an abundancy of all kinds of fish, crabs, prawns and herring along the coast, and our agriculture is very strictly regulated as to antibiotics, pecticides, no GMO etc.

Nevertheless, we who grew up just after WWII, and being a poor country at that time, we had fish 5 times a week for dinner, some venison, salt herrings and blood pudding. This is so nutritient-dense foods!

Of course, I miss a big glass of cold milk & warm bread right from the oven, but I am happy that I discovered in time that these two ingredients were ruining my health.

Eating real food, made from scratch, with no additives and no E-numbers... make me feel more and more at ease :grin:

Hi Lilja,

The milk and bread nation, hey? Never knew that. You do have an abundance of the healthier fish there, I would not 'fit' there, can't stand fishy fish. :wink: But I do hope to visit Scandinavia, my great, great grandfather was Swedish, my last name is Swedish.

This are scarey and exciting times for me, I shall be fine with all that AMAZING support here.

I love the concepts that if it does not nourish you, it is not food; and not to think of giving up "comfort", but rather giving myself a gift.

For this newbie, except for my safe foods (and I'm not really sure yet if they will suddenly turn on me), food in general is a bit of a minefield right now.

Staying determined and optimistic, though. This is a great place.

As someone with multiple intolerance's, and Soy being my worst enemy, when asked questions by others about why I stick to my strict eating plan I reply,

"would you knowingly ingest a poison like kerosene or fly spray?

Hi Summer. You are getting great info and support. I agree that dairy free cheese is disgusting! I find using avocado instead of cheese in many instances takes care of that creamy/fatty taste and feel. I love it in omelets and sandwiches. Which brings me to GF bread. My favorite is a faux rye that comes from a local GF bakery, but my husband and i both are OK with UDI'S white bread and bagels if they are toasted. I usually only use it if I am having a BLT.

This is definitely a mind set. It's taken a couple years to get to the point where I can "get away" with having small quantities of things I shouldn't eat much of. Recently, I took a bite of my husband's cheese enchilada ( I had beef ones) and I was fine the next morning. I'm doing so well though, that I really don't want to rock the boat too much.

This is the time to heal. Eat as simply a you can right now.

As they say in Australia 'You tell 'em, love!'

People just don't get that so called healthy food can be 'poison', unless you are in anaphylactic (sp?) shock or carry and Epipen.

Hi Leah,

I guess I will pass on the fake cheese. I do love avocado, am buying 3-4 a week. Slather it on corn tortillas (until I fight out corn is an enemy, doesn't seem to be) before I put in chicken slices and roll up. On GF toast alone it's fab too. It seems most of the GF breads are fine toasted, a BLT sounds good!

YAY for you for being able to eat a bite of a cheese enchilada.

I am eating simply and so far so good.

this is as Aussie as you can get, working in the garden on Friday morning and what should appear behind me! A kangaroo.
This area used to be rural, is now full of houses all built in the past 2 years. He must have come a fair distance on roads and via backyards to end up in our yard.

I just used Daiya cheddar for the first time and made macaroni and cheese with brown rice pasta and almond milk. It tasted like the real thing! Expensive, though.
