Hi Everyone,

Well, I go the recipe for the stuffed chicken (for those who can tolerate it):

1 onion chopped fine, 3 garlic cloves chopped fine, saute' in olive oil until translucent, set aside and cool. 3 cups cooked white rice cooled. 1 cup craisins, or currents, or golden raisons, or a mix, 1 tablespoon dried oregano, 1 tsp. dried onion powder & dried garlic powder. Mix above ingredients then add 1/4 cup frozen concentrated orange juice, mix and add 1/3 cup chopped fresh cilantro, season with salt and pepper. Take chicken thighs and stuff with mixture or chicken breasts, Make a glaze of 1 cup apricot Jam mixed with 1/4 cup balsamic vinegar and you can add 1 tsp fresh grated ginger if you want. Glaze your stuffed chicken reserving some for last glaze through cooking process. Bake at 350 until golden brown... I think that's it. You can also cook your rice with chicken broth instead of water... Happy cooking!!

I asked her to find out what brand baguettes she served that night, but haven't heard back on that one yet.

Hi Paula,
thank-you for the recipe and getting back with it. I will do some modifications definitely to get it to work for me, but a great jumping off point to do several meals and freeze for future. Have a great day. I am thinking fish could substitute in there too
