OK, I don't know much about MCS, but theoretically, isn't it caused by leaky gut and mast cell activation?? Couldn't she take prednisone and antihistamines to tolerate more of her world? I'm shocked she can eat tuna, lentils and chickpeas. If those are on the menu, surely there must be other foods she can try? And how does a glass room in her parent's house protect her from EMFs and even chemicals? Cell phone EMF is all around, unless there is a metal barrier around her room. And she must breathe the air being blown around her home's HVAC system, no? It recirculates air in the rest of the home, full of whatever chemicals are in there.

That's an extraordinary story (because of the isolation), but such a restricted diet doesn't seem all that extraordinary to me, because my basic diet consists of only 4 foods (unless you want to call water, coffee, and occasional tea, foods). Basically, I eat eggs, pork, corn, and almond milk. I can't tolerate almonds or almond butter though, or any other nuts.
It's all a matter of perspective, because historically, humans normally ate a rather restricted (monotonous) diet (though the menu varied depending on where they lived). Except for the ruling elite, expecting a wide variety in menu options is a development of only the last couple of centuries in human history. The pioneers who settled this country, for example, ate a pretty simple diet, as a general rule.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
I suppose it's all about one's expectations and attitude, when it comes to coping with such a minimal/monotonous diet and existence. Maybe there are other foods that she could safely eat, but she is reluctant to try other foods because she knows these few are safe. If so, one could hardly blame her. I find myself becoming bored with a diet that is gloriously varied by comparison... I am glad to read that she has such a positive outlook. It must be incredibly difficult for her, and for her Mum.
I do want to learn more about MCS because I also have sensitivities to some fragrances and many chemicals - my reaction is nowhere near this extreme, though.
I suppose one lesson in this is that it could always be worse!
