Hi Paula,
I watched that video, and IMO, the general point that he tries to make (that no one should eat wheat, barley, rye, or oats) is right on target. No human digestive system is capable of digesting all of the peptides found in their molecules, so eating them is just asking for trouble.
That said, some of his examples are a little off base. IOW, the ways that he tries to describe how certain processes work, are not quite correct, suggesting that he doesn't actually understand how these things work, but his lack of understanding of these mechanisms doesn't mean that his basic presentation is invalid.
Also, his understanding of agronomy and production agriculture appears to be minimal. He's confused and misguided on certain concepts. For example, he claims that modern agriculture destroys soil bacteria. That's BS, presumably fabricated to justify his claim that food tastes like crap because it is grown without soil bacteria, implying that the plants cannot absorb minerals.
When food tastes like crap, it's because all the flavor and quality has been bred out of the plant by selective breeding, in order to select for more desirable traits (more desirable from plant breeders' perspectives). IOW, most food plants have been bred for yield and conformity/uniformity these days, and in doing that the tradeoff was a loss of flavor and many other traits. Plants are bred so that every plant looks exactly the same in a field. That wasn't the case 50 or 60 years ago, and we gave up a lot to get the beautiful, uniform plants that we have now. They grow at the same identical rate, and mature at exactly the same time, so that they can be harvested mechanically.
Despite his claims, you couldn't eradicate most of the soil bacteria if you wanted to. Sure, you could do it in a tiny test plot, for maybe a few days, but there is no way that you could afford to sterilize the soil on a production agriculture basis. Not only would it be prohibitively expensive, but it would be physically impossible. But the most important point is that doing so would drastically decrease yield potential, and trust me, no farmer is going to intentionally do anything that is known to reduce yields, if he can possibly help it. That would be financial suicide.
So I'm guessing that he has never actually spent any time farming.
But I'm with him in the message that no one should be eating those 4 foods.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

I also have never farmed. So... it can sound right to a person who lacks this knowledge.

I agree. I have come to believe that the healthiest diet contains the least grains (of any kind, really, but especially the major gluten-containing ones). Grains, even whole grains, turn into pure sugar in the body, and sugar from any source in the standard American diet may be the main culprit leading to most of our chronic diseases. Not to mention the theory that it is the sugar in our diet over many years that leads to dementia/Alzheimer's. That recent study shared by Theresa was fascinating - they eliminated all gluten and greatly reduced grains in general in the protocol that showed that 9 patients with early dementia could reverse their symptoms. Even before this study, I had heard Alzheimer's refered to as "diabetes type III").
