Heartburn may be caused by low stomach acid, or it may be caused simply because of poor digestion, as a result of the inflammation associated with MC. If it's associated with gastric reflux issues, significant doses of vitamin D can usually help. Some members here (Gabes comes to mind, for example), have resolved a reflux and heartburn problem by upping their vitamin D intake. This past thread should be helpful:

and in hindsight - at the time the GERD was really bad and I had to do high doses of the Vit D3, histamine inflammation was depleting the Vit D3 and magnesium,
Since balancing histamine inflammation, (Vit C, Magnesium and Zinc) and fixing other deficiencies, I have not had any GERD, hiatus hernia symptoms
I would do high doses of Vit D3, and use magnesium spray to increase magnesium intake. Spray some of the magnesium spray on your chest/upper stomach so it is absorbed where it is needed.

Thanks, all, for the suggestions! I reckon I could increase my Vitamin D intake and reduce my carbs. I know that I also need to increase my protein intake, but with apparent sensitivities to many meats and to the artificial sweeteners and other ingredients found in so many protein powders, it could be a bit of a challenge.
I was thinking that for now I'd mostly try to stay in my known "safe" zone of foods until I get the food sensitivity test results, but I can try making some subtle shifts for now and see if they help, and step them up later when I have more information to fill in the gaps. More to learn...
