Thank you for your amazing explanations. They were exactly what I needed to hear! Deb, apologies for hijacking your thread... :smile:

I did test reactive to s. cerevisiae on my Enterolab stool test in 2010. It was a low positive antibody count and I did cut out yeast for about a year. I don't seem to react to the occasional Udi's bread. I do wonder whether I may not be fully tolerating my water kefir because it *might* contain s.cerevisiae. I bought Pickl-It jars to start anaerobic fermentation and have more control over the organisms growing in my water kefir. The kids and I will make our first fermented sauerkraut tonight!! They are both hooked on WK and kraut, so I expect good things to happen from now on. I have about 20 Nystatin pills left from my protocol, so I might quarter them and have my daughter take it for a week or two. Will ask our doc first. The author of "Autoimmune: The Cause and the Cure," and Donna Schwenk, "Cultured for Life" both healed autoimmunity and food allergies by including at least one small serving of cultured drink or veggies WITH EVERY MEAL. We're doing it at breakfast and dinner so far. My daughter and I have loose stools, but not frequent D, so I think we're adjusting to all the new bacteria. My son with no obvious GI symptoms is fine, so he's my control in this experiment.

I'm hopeful we're on the right track!
