Gluten free baking powder
I am thankful for Jean's list of foods containing gluten but was depressed that I saw baking powder there. I finally found a gluten free cook book that contains everything 'legal' there (for me) except agave syrup and baking powder. What do others use for leavening instead of baking powder? Can Stevia be substituted for agave syrup?
There are gluten free baking powders. Here is a list. Apparently the issue comes with the "absorption moisture agent" which can contain wheat. http://glutenfreecooking.about.com/od/g ... enfree.htm
I think some of us can tolerate stevia but I find it leaves an aftertaste. Can you tolerate honey or maple syrup? Deb

If you don't want to use baking powder (or can't find a good one), you can substitute one of the following:
1 tsp. baking powder = 1/4 tsp. baking soda + 1/2 tsp. cream of tartar
1 tsp. baking powder = 1/4 tsp. baking soda + at least 1/2 tsp. vinegar (or lemon juice)
(I just happened to have The Paleo Approach Cookbook checked out from the library, and those are the subs Sarah gives in the book.)
