Hello everybody and merry Christmas to you all,
Our food traditions during Christmas are all based on meat, old fashioned recipies, and we sit at the table for several hours. Christmas Eve we have dried, salted and smoked lamb's ribs, cooked/damped for 3 hours. Salted herrings, turkey, and a lot of fat. This year I made my potato salad with lactose-free sour cream, and I digested it well.
Despite the outdoor temperature (minus 9 Celsius), I have not had any chills for the last three days.
Fat, oh fat, thou art my friend
Lilja
PS: I even had a couple of beakers with Aquavit (which is brewed on potatoes), and Crabbie's Glutenfree Ginger Beer (U.K. product). It tasted heavenly good!

Lilja,
That's very good news. The brain runs best on glucose, but there is a lot of evidence to suggest that fat may be the best fuel for the rest of the body.
It's good to hear that your Christmas is going so well.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Hi Patricia:
I don't have a problem with keeping meat or chicken in the fridge for a few days before cooking. Once cooked though, as Tex said, I freeze anything I won't eat by the next day in individual portions. I think histamines are supposed to increase much more after cooking, however if you are very sensitive to them, even a few days of the raw meat sitting in fridge may bother you.
I feel like you do, that if it was only the big 4 that would be easier. I think that I may have some other intolerances, but can't identify them, and can't do the additional more detailed Enterolab testing, as I am still on Entocort. I now take one 3 days a week, and had been getting worse, with more D. I had also been reducing my antihistamines, not taking daily but every 2-3 days, and went back to one a day of those, and it has reduced the D back to just first thing. So I guess I still have a considerable histamine issue. I will try and go off the Entocort (have been on about 7 mos) soon, and see how I do.

Skål, Lilja!
Thank you so much for the additional info, Tex and Lisa.
How much longer will you be on Entocort, Lisa? I am now switching to one capsule every 3 days, then one every 4 days, and finally one every 5 days, according to Tex' suggestion. I think I'll take the last one on February 4th, if I calculated correctly. However, I don't think it has been very effective for me. Which is why I really need to figure out what I can eat safely and what I can't.
I wonder, Tex, how does Entocort affect an elimination diet? Does it have an effect on it if it doesn't seem to help my symptoms?

Well, if it doesn't suppress any symptoms, then it shouldn't have a significant effect on an elimination diet.

Patricia, I will prob try and get off of it in the next couple of weeks. I still have morning D, usually 2-4x, so not sure if the Entocort is doing much at this point. I will see when I stop it. It was more helpful at a higher dose, but still I was never 1x day, with no D.
And Lilja, sorry to have hijacked your post.

Lisa, what is your vitamin D level?
I am very deficient (18 instead of a minimum of 50) and as Tex explained, most likely that is the reason why the Budesonide is not doing that much for me. I am now taking vitamin D3 (one day 5000 units, one day 10'000 units, adding up to 50'000 units a week).
Hope you feel better soon!
Love, Patricia

So sorry to hear that, Lisa! What did your doctor suggest?
When my vitamin D was tested and found to be that low my PCP prescribed 50,000 units per week (to be taken once weekly). But the prescription ended up being for vitamin D2. So I switched to over the counter vitamin D3, and I take 5000 units one day, 10'000 units the next day, which averages out to about 50,000 units a week. I have not had it tested since and I think my next appointment with my PCP is in March. I will ask her then to have it tested again.
