So, this is my latest challenge. I'm weaning off entecort very slowly and down to 2/week. Poops are just fine - a little firmer than Norman, actually, for the last month. Still taking small doses of antihistamines daily and lots of other safe supplements.
So, here is the challenge. I'm feeling so much better than I find myself sorely tempted to take risks with my diet. Still eating very strictly in terms of no dairy, gluten, soy, no grains but rice, only well cooked veggies. Eating daily muffins that contain eggs, almond flour, bananas (yum!). I notice my mind trying to rationalize introducing tomato products, a few raw veggies, onions, fries, and some other tempting foods. The temptations are pretty strong right now. The unrelenting central NY winter weather is really not helping. Looking for some comfort anywhere I can get it!
Rationally, I know that I should still be strict at least until I have successfully discontinued the entecort. Especially since I want to do the enterolab testing in a few months.
Does anyone have suggestions to get me through this dangerous time?

Congratulations, it sounds like overall you are doing pretty well!
During the eight week period after your last entocort stick with your tried and and true safe diet plus the antihistamines. Two weeks after my last entocort my brain cleared and during that eight week period I felt way more sensitive to food if that makes sense.
While you are still protected by Entocort....if you must.....since you are craving.....you would probably be ok with a few oven roasted sweet potatoes or oven roasted white potatoes. Peel the potatoes, cut in wedges, put in ziplock with melted coconut oil or olive oil, salt and pepper, shake well, put on cookie sheet on top of alum foil for easy cleanup and put in oven. Since you are doing well while on entocort you are probably ok with a small blob of a gf,df, sf, chemical free jarred spaghetti sauce on top of GF pasta. I'd stay clear of onion and raw foods until you are off of Entocort for 2-3 months.
So....roasted sweet or white potatoes (peeled) would be safest followed by a tiny blob of safe tomato sauce on a GF pasta. Risky would be raw foods and onion. They will definitely aggravate and delay healing.
We're all individualistic so ymvv. I reread your post and it looks like you are doing pretty well.

I didn't get Enterolab testing until about 5 weeks after my last Entocort.
Let me know if you have any questions. The 8 weeks after last Entocort will go by pretty fast. I remember feeling "heightened sensitivity" if that makes sense when I got off of Entocort. Entocort muffled things for me.

Thanks, Brandy - good clues about "life after entecort". I've been on it now for 3 years, so I can't remember...
I should have been more specific. White and sweet potatoes both do fine with me as well as baked winter squash, green beans, carrots, beets, occasional broccoli and cauliflower. I eat almond butter and homemade low sugar jam on rice crackers. And, best, a wee bit of 90% chocolate and a glass of wine every day, too. So, I really shouldn't be complaining of boredom! However, I grow 120 tomato plants a year and have so many jars of wonderful home canned tomatoes and plain sauce with no added ingredients. Obviously, I love tomatoes to go to all this trouble. Maybe I'll take your advise and put about a tablespoon of plain sauce on rice pasta and see how that goes. Just about kills me to make a big batch of spaghetti sauce for my spouse with onions, peppers, mushrooms, garlic and spices and not be able to eat it!

For me the reaction to too much tomatoes (or tomato sauce) has always been nightshade aches and pains, not D. I've stopped eating russet potatoes per TEx as they caused me joint pain and only eat the red or yellow potatoes. With tomato sauce and potatoes it seems like it a quantity thing. Too much over several days and I get joint pain.
I've gotten away from the brown rice pasta. I think the white rice pasta is gentler on my stomach. For me that is tinkyada white rice pasta spaghetti or Annie Chungs pad thai GF rice noddles in the asian section of my grocery. The annie Chungs comes from Thailand so I don't know how good the "GF testing" is on that.
You might be ok with a very simple pesto. Bunch of basil leaves, olive oil, salt, pepper and whirl in food processor. You can put this on chicken, fish, pasta squash etc.
12 months later try adding handful of toasted almonds to the above pesto recipe.
12 months after that test above with a clove of garlic.
I put my pesto in ice cube trays, freeze then when hard take out of trays and put in ziplock bags in freezer.

As Brandy said, YMMV, but for me (and many of us here), citric acid caused D while I was still recovering. Tomatoes appear to contain varying amounts of citric acid, probably depending on the variety. IOW, small servings and/or the right varieties may be OK, bur large amounts of the wrong type may not work so well.

I forgot to mention in my year 2 version of pesto I added a splash of lemon.
To give you some confidence down the road.....I find that I find if I'm making a soup with onion as an ingredient I'm ok with a 1/4 of a large onion in a soup recipe. One time I put in a whole large onion in soup. Big mistake. I reacted to that. Onion for me is a quantity thing.

Gabes, you're right, motivation is hard to come by this time of the year. I'm more accepting of "what is" when I can garden all day in the sun and eat homegrown veggies. I bet that there are many here who would like to see your reading list if you would like to share. Is it already a sticky?

In the first stages of 'entering MC world' we are hyper villigent, reading and absorbing everything, watching and noting every symptom, reading every label, double checking everything....
Then comes the stage where we need to just go with the flow, let the body do its healing.... Calm the mind, relax, and have blind faith we are doing the right things.... It's hard to slow down and embrace that phase after the intensity of the first months....
Once I get my computer fixed, I will find the discussion and put up the link where quite a few members recommended their favourite books/authors....
Anything by Pema Chodron is good...... I love her audio books as she has gentle caring voice, and relaxed humour in her approach to life.... Very much along the lines of progress not perfection....

I am actually starting an 8-week class this Thursday, called Mindfulness Meditation/MBSR (mindfulness-based stress reduction). I am really excited about it and looking forward to it and I hope this will help me!
