How about these.

Balsamic Chicken Salad

Marinate: 2 hours
Bake: 12 minutes

Ingredients
4 medium skinless, boneless chicken breast halves (about 1 pound)
1/2 cup dry white wine or chicken broth
1/4 teaspoon coarse salt or salt
1/4 teaspoon freshly ground pepper
1/3 cup raisins
Boiling water
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon snipped fresh tarragon or 1 teaspoon dried tarragon, crushed
1 teaspoon finely shredded lemon peel
Shredded lettuce
Finely shredded lemon peel
Directions
1.Flatten chicken slightly with your hand. Place in a 2-quart rectangular
(11x7x1-1/2-inch) baking dish. Drizzle with wine or broth; sprinkle with coarse salt and pepper.
2. Bake chicken, uncovered, in a 350 degree F oven for 12 to 15 minutes or until tender and no longer pink. Let cool in dish. Drain off liquid.
3. Meanwhile, in a small bowl, cover raisins with boiling water. Let stand for about 15 minutes or until the raisins are plump. Drain.
4. In a bowl, whisk together olive oil and vinegar. Whisk in tarragon and the 1 teaspoon lemon peel. Stir in raisins. Pour over chicken in dish. Cover with plastic wrap and marinate in the refrigerator for at least 2 hours or up to 12 hours, turning the chicken occasionally.
5. To serve, arrange chicken on shredded lettuce. Spoon some of the marinade and raisins over chicken. Garnish with additional shredded lemon peel. Makes 4 servings.


Curried Chicken Salad

Prep: 30 minutes
Chill: 1 hour


Ingredients
1 orange
3 cups cubed cooked chicken (about 1 pound)
1-1/2 cups seedless red grapes, halved
1 cup thinly sliced celery
1/4 cup light mayonnaise dressing or salad dressing
1/4 cup lemon-flavor low-fat yogurt
2 teaspoons soy sauce
1 teaspoon curry powder
Small pawpaw, peeled, bias-sliced in half lengthwise, and seeded (optional)
Fresh chives

Directions
1. Peel and segment orange; halve or quarter each segment. In a large mixing bowl, combine orange, chicken, grapes,and celery.
2. For dressing, stir together light mayonnaise dressing or salad dressing, yogurt, soy sauce, and curry powder in a small bowl. Pour dressing over chicken mixture; toss lightly to coat. Cover and chill for 1 to 24 hours. If desired, serve in pawpaw halves and garnish with fresh chives. Makes 6 servings.

Larry isnt into any fancy receipe's he wants the plain tried and true he said! :rofl: I think I will make two differnt bowls

Hi Mars. You can probably make it whatever you want. Throw in things that you like, anything like potatoes,eggs, fruit,or other vegs,pasta,rice,dried fruitetc. & add a dressing of your choice. Easy Peasy.

I have heaps of recipes. Many books & scrapbooks of cuttings, stuff I have dowloaded from the net etc. Funny thing is I never follow any of them. Just look to get an idea & then do my own thing with whatever I have on hand or can get easily.

I'm trying to have a variety of foods to eat. Being creative and interesting helps the diet go along easier. Larry on the other hand doesn't like "strange" foods! :rofl:

My recipe is really simple. Cut up the cooked chicken, add some chopped celery, tarragon, salt and pepper, and mix it all up with a good mayo, like Hellmann's. Not very creative, but quite tasty.

I put red grapes cut in half, sliced celery, and chopped pecans in mine. Mayo (maybe mixed with some sour cream), salt, and pepper. And chicken, of course.

Here's what I ended up making:

chicken breast - shredded
celery
onion
garlic salt
salt and pepper
sliced green and red grapes
small amount deli mustard
dill weed
sliced almonds

Pretty yummy!
