damage from eating gluten

damage from eating gluten

Hello:

I just was browsing the celiac board and this statement popped up:

"Dr Joseph Murray, MD- Celiac Specialist from the Mayo Clinic in Rochester, Minnesota says one cookie per month for a year will cause damages that can be seen in a biopsy. Damages occur whether or not you have physical symptoms." (quotes mine)

It caught my attention because I've never heard it put quite that way, but it confirms what I've been told by Dr. Fine.
Maybe someone else has already posted this - (I don't follow the board closely.)

Thanks for posting that. It is tempting for MCers to eat occasional gluten once they no longer get symptoms from it, but it is important to know that it can still cause damage.

Hi Alice,

Thanks for the information. I've always been convinced that it only takes a tiny bit of gluten on a somewhat regular schedule to maintain or increase damage to the gut, because I was a victim of cross-contamination by traces of gluten in my diet a few years ago.

But that's the first time that I've seen that statement by Dr. Murray. That puts it in a form so that anyone who is tempted to cheat on the diet should certainly be aware of the risks.

I had a conversation this morning with the owner of the gluten free bakery I posted about awhile back. She has perfected a gluten free tortilla and has started selling GF breakfast burritos. I mentioned that I sometimes will order a breakfast burrito without the tortilla at certain places. Of course that makes it not as convenient to eat, lol. She asked me about possible cross contamination. The times I have eaten at such places, I have not noticed any symptoms. I am wondering if minor cross contamination can also cause damage. My last colonoscopy in 2008 results showed no damage. I guess the only way to know for sure would be Enterolab tests.

This poor lady was diagnosed 3-4 years ago with celiac. Since she and her husband are both chefs, they had to make a lot of changes. Like so many, she had to have her own toaster. Her husband not only helps her out in her GF bakery, but he is also a chef at a local restaurant. The bakery has really taken off. She has purchased a larger dough mixer since they opened last fall. They are looking to expand.
