1/7/06 Day 1

Breakfast:
Small glass of V8 juice
3 cups coffee w/fat free creamer
1 over medium egg
1 slice of breakfast ham

Lunch:
2 cups of broccoli/cauliflower w/1 tsp Heart smart butter, salt, pepper
3 slices of 98% fat free shaved turkey breast

Snack:
1 dill pickle

Dinner:
Top loin steak cooked in sauteed onions, mushrooms in virgin olive oil
salad w/fat free cheese, green onions, radishes, green peppers in red wine vinegarette dressing
1 fat free strawberry jello cup

Drinks:
Peach flavored sparkling water (I found a replacement for the cream soda) YIPPIE 3 12-oz glasses so far today

According to the South Beach diet I should have had a mid morning snack. I am finding that eating like this makes me feel that I am pigging out but am assured that I am eating like I should.

Saturday, 8th

Breakfast:
ham and cheese omelette
small glass v-8 juice

Lunch:
2 cups pinto beans w/seasoning and onions

Dinner:
Large salad w/veggies and shredded chicken breast w/red wine vinegar salad dressing

Drinks throughout day:
water
coffee and lite powdered cream
diet Sprite

Tuesday 10th

Breakfast:
2 cups coffee w/lite creamer (powdered)
2 small breakfast egg muffins (see receipe below)
1/2 bottle v8 (individual size)

Snack:
fat free jello

Lunch:
1/2 can rinsed green beans (canned) sprayed w/I can't believe it's not butter spray)

Dinner:
Balsalmic Chicken with lemon pepper seasoning cooked in olive oil
1 cup frozen veggie soup w/o meat

Desert:
1 sugar free fudgepop


Breakfast bar receipe

5 large eggs beaten
1/2 lb turkey sausage browned w/onion
1/2 green pepper chopped
1 cup mushrooms chopped
1 cup (or less) fat free cheddar cheese
(turkey bacon can be used instead of the turkey roll. Crumble the bacon into the egg)

brown turkey sausage in pan w/onion and green pepper until pink is gone. Mix w/egg

Spray muffin pans w/cooking spray (i used olive oil - lightly)
pour mixture into pans and sprinkle w/fat free cheese
Bake 350 for 20 minutes

Place in plastic bag in fridge. Remove and heat in micro until hot!

1/2 bottle V8
2 egg cups

Snack:
Sugar free jello

Lunch:
veggie soup w/turkey sausage, green beens (only veggie in it) and v8 broth

Dinner:
Omelette w/ham, cheese, peppers and onions

Cheese omelette in micro omelette maker
2 slices of turkey bacon
1/2 v-8

Snack:
jello cup
2 slices shaved chicken breast

Lunch:
1/2 chef salad w/fat free italian dressing (sorry I ate this)

Dinner:
1 eggbeater omelette w/green peppers, onions, sausage

Official Weigh in day - 13 lbs lost!

Breakfast:
2 egg omelette w/heart smart cheese
2 slices of turkey bacon
v8

Snack:
Forgot whoops!

Lunch:
1 small Wendy's chili

Snack:
4 green grapes

Dinner:
1 butterflied pork chop w/lite soy sauce, paperika, salt, pepper and garlic
2 slices of tomatoe w/parmessean cheese
2 rings of onion
(all of the above grilled)
green beens
2 green onions

2 eggs cooked in olive oil spray (over medium)
1 piece multi grain bread

Snack:
Hard boiled egg

Lunch:
Pita pocket filled w/chicken salad

Snack:
Nothing

Dinner:
1 left over hamb patty from Sunday's dinner
caulif. and brocc. in steamer

Dessert:
3 strawberries dipped and chilled in semi-sweet chocolate/low fat cool whip (2 sqs choc and 1 Tbs. whip cream meleted)

nothing (bad - was cleaning)

Dinner:
Asparagus steamed in the steamer
Cod filet in foil in oven w/1 spray of "I can't believe its not butter" and pepper/lemon seasoning (YUK - I am not a fish eater and I didn't like the cod)
