OK, I am probably getting into reinventing the wheel.
The book "Breaking the Vicious Cycle" cites research done on flour absorption.

I am not a member so couldn't read the entire research. According to the book they found if they separated the flour and removed the gluten the bread baked from it was readily digested. That is not surprising. What did surprise me is that if they added the gluten back into the baked bread it was still readily absorbed. Leading to the conclusion that our bodies are not able to break down the components of wheat flour. It isn't just the one component (gluten).

I am also totally amazed that this research was published in 1981 (35 years ago). This book was written in the 50's! And GIs still insist diet doesn't matter!
