Apparently we are not the only ones who are becoming disenchanted with the huge expansion in processed foods over the past few decades. You may find this article interesting:

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
What the author fails to mention is that although the banana flour is high in resistant starch, as soon as it is heated the resistant starch is gone.
I use green banana flour in my pancakes, but the only way I can benefit from the resistant starch is to eat it raw.
I dehydrate my own green bananas and eat a few of those to get some resistant starch in my diet....or just a teaspoon of potato starch works, too!
I like to use coconut flour, sunflower seed flour, or pumpkin seed flour. I make a walnut bread and coconut flour biscuits. It works for me!
I feel better being grain free.

I use this recipe. I form the dough into balls and flatten them to make biscuits. I can't eat eggs, so I sub 3 flax eggs. I also add a few drops of apple cider vinegar to the baking soda to give it some rise.

There are many simple coconut flour recipes out there, but it's tricky to find ones that work with egg substitutes. I make coconut flour cookies, too. The trick is to only eat about couple of tablespoons of coconut flour a day, or the fiber content causes digestive distress.
