Ok, I'm new and thank you so much for the add!!!
Just diagnosed this week, by fluke! He took a biopsy just because he was there. Good instincts on my GIs part.
I'm reluctant to go on meds. I'm already on hydrocortisone. I need it to live. I'm adrenal insufficient.
So I'm ready to change my diet. Just made a pot of rice. I do need to go shopping tho as I've not been eating a whole lot. Is chicken ok? I read turkey - I'm not a big fan, it's dry and well gross. Plus I don't love green beans, but I'll eat them if I have too. Will buy some more sweet potatoes.
Any other suggestions welcome and appreciated. I haven't left the bathroom in a month.

Welcome to our Internet family. A relatively small percentage of us are sensitive to chicken. When that's the case, turkey is virtually always a safe alternative (also duck, goose, pheasant, quail, etc.). Lamb is another protein that virtually never causes reactions. That said, it's certainly possible that chicken may be safe for you (just beware of "injected" chicken).
Other well-cooked vegetables that typically work for most of us (as long as we don't overdo the serving size and get into trouble with the amount of fiber) include squash, carrots, broccoli (if gas production is not a problem), potatoes, and/or sweet potatoes.

I can't stress Tex's comment about injected chicken enough. I don't think I react to chicken itself, but I definitely do to grocery store chicken. I'm fine with chickens from my uncle's farm. When I can't get that I default to turkey. Turkey doesn't have to be dry. You can grill the legs, or roast the breast etc. No need to make a whole holiday dinner every night.
If you live near a farmer's market, I encourage you to go hunting for game meat and duck eggs. I'm a broken record with the duck eggs, but they work really well for me and I find they actually taste better than chicken eggs.
