So, I'm kicking myself because awhile back, someone posted some information about the best kind of bacon to buy for those of us that need gluten free, soy free, etc.........and since then, I've learned to copy and paste the things I want to remember into a word document so I will have that info! I went back and did a search but I couldn't find it at all.
I'd like to maybe try to add in bacon in about a week (I've been on a very restricted, strict diet for about 6 weeks now......next week will be 7) and I feel like I have some good healing underway. Things have definitely settled down. I can only do it over the weekends (so then I have the weekend to recover for work on Monday morning if I have a reaction), so it will take me awhile to figure out what I can and can't eat at that rate, but that's ok.
Can someone tell me what brand you buy? I think there was something about uncured? Thanks for all your help. This place is a lifesaver!

If you're like me, and pork is not a problem, I never stopped eating generic regular-cured, thick-sliced bacon. Many here do use uncured bacon, presumably to avoid the nitrates/nitrites. I haven't seen any uncured bacon around here. In the past I've also used Hormel, and Rath Black Label, for example.

Well, Tex, I'm not sure that it's not a problem, but I guess I'll find out in a week or so. It was a 1+ on my tests and it wasn't the highest of the 1's (beef was) but it was next, and tuna was right under that one, but I'm skipping over that one. If I can't have tuna with mayo and dill pickle relish, I don't want it! :) I'm just getting a little weary of chicken and turkey and thought I'd try to introduce something new (I'm also not a big one for lamb or anything like that). I was raised in western Kansas and my dad was a farmer. I'm a beef girl, and it's killing me to not have any, but hopefully, in time! I'll be on the lookout for uncured bacon. I live in Colorado Springs so I have lots of shopping options around. I'm sure I can find it somewhere to try. Thanks for the info.

I haven't tried to add bacon back in yet. I'm getting tired of chicken and turkey! :) I just don't know if I can do turkey bacon though. I have a friend who told me that if it's good, you can't really tell the difference, but I'm sure I'd be able to! I found one at King Sooper's (Kroger). It was Hormel uncured bacon and I will try it next weekend.

Hi Jari,
I eat Hormel Natural Uncured (actually found it in Walmart). Doesn't leave much grease though so watch it while cooking, has a tendency to burn if cooked to hot, lol. Tastes great though....and I was brought up on home raised beef too, so this new diet is killing me too.
