Regarding quinoa: I couldn't eat it at first, and then I had to find a brand that worked for me, but now I love it!
Quinoa porridge with almond milk, honey, and cinnamon is so freaking good (well not as good as normal porridge, but I'll take it).
Any other ways to add potatoes to your diet for some carbs? Shredding sweet potato in a food processor and then frying in coconut oil works for "healthy" hash browns.

You are getting a lot of great information here! I will agree with all that not everyone is the same so what you also have to be careful of on purchasing processed foods is the Gums! For example there are Gums used in any of the store bought Coconut Milk, Almond Milk etc. Also in canned milks. This for me was huge as those gums really bother me. You can order online at Amazon little cartons of Coconut Milk from Thailand that are 100% coconut milk and nothing more. Also Trader Joes normally sells a canned light coconut milk that is 100% coconut milk and water. They had some problems with their supplier a while back so they have not had it for a couple of months but I have been assured that it will be back in the stores by next month. I'm counting the days. Also corn was horrible for me as well. My doctor (NT) said No Grains at all so I was and continue to eat a Paleo type. After I started healing I did slowly one by one started to introduce something but you have to wait anywhere from 1 to 3 days as depending on where your sensitivities start it could take that long to get through the digestive track. jcml12 you can make almond milk if you have a Vitamix or similar blender. just soak the almonds overnight, blend with filtered water, and then pour the result through cheesecloth or a fine sieve. You can add vanilla or pure coco powder etc. to flavor it how you like. It's a bit of a pain, but not too bad and then you avoid the stabilizers in store bought milks.
You will end up with a lot of pulp over time, but I have been adding it to baking or humus or whatever I have on the go.

You can also make coconut milk with unsweetened shredded coconut and water. I use a regular blender and it works fine. A local restaurant serves fresh fish with a coating of grated sweet potato. It is fabulous. There are a few recipes for this online. The restaurant is called "Leftovers" and you may find the recipe using their name.
I have the recipe in Florida or I would share now.

That's it!!! So good. Obviously PP have to adapt the recipe for food intolerances but I've eaten this dish at Leftovers many times and never had a problem. I hope you enjoy it.
