Ok, I'm getting some zucchini tomorrow from a guy that my husband works with and I really want to try that Paleo Muffin recipe that Sheila posted. I have EnerGee at home and used it over the weekend to try out some Namaste waffles. I did ok with it. I've read you can use ground chia or ground flax seed, but when I did a search, I saw where those sometimes can act like a laxative. I also see where you can use applesauce in place of an egg, but the recipe calls for 3 eggs, so that's quite a lot of liquid along with the zucchini. Someone used Arrowroot. Is that Arrowroot powder? Or I saw a flour? Surely it's not the flour. For those of you with egg sensitivities, what have you had the best luck with? I've done a search on here, but I saw pros and cons to a lot of different options..........what works the best with muffins those of you who have tried it?

Nothing works like eggs....but that said, I have tried flax, chia, applesauce, bananas, & baking soda/apple cider vinegar.

There are quite a few recipes on pinterest if you search ......eggless aip paleo muffins.

I preferred flax eggs, but flax is a phytoestrogen and I had to quit using it. I now use banana or applesauce or pumpkin purée.

You can also search egg replacements on Pinterest and get exact amounts.

It's a lot of trial & error until you find the right one for you. Good luck!

It's tricky to replace 3 eggs. I've used both flax and chia and seemingly done okay with them, but it's probably not something I'd eat a lot of on a regular basis.

If you need an alternative recipe, you might also try looking for AIP baked goods -- AIP is the paleo autoimmune protocol, and it eliminates eggs, so AIP-friendly recipes wouldn't have eggs in them.

Kristen,

Thanks for the info. I will do a search for AIP as I believe this recipe came from a Paleo cookbook also................so, (and I'm showing my ignorance here as I don't know a lot about Paleo and that's been the least of my worries right now) I'm assuming that some people cooking with Paleo use eggs and some don't?

AIP (Autoimmune Paleo) is a more limited version of Paleo, with eggs, seeds, nuts and nightshades omitted, so any AIP recipe would not have eggs.

The cool thing is that there are so many blogs and recipes out there now for various diets, intolerances, etc. And I just thought of another good one as I was typing... http://stalkerville.net/advanced-search/. Despite the sketchy-sounding web address, it's a site that collects mostly paleo recipes from all around the internet. On the advanced search page, you can narrow it down by tons of options (ingredients you want or don't want, type of diet, cooking method, etc.).
