Chia Seeds

Hello. I saw a recipe for pumpkin pudding from Against All Grain. It calls for ground chia seeds. Are they safe for us? Whenever I read a new recipe I wonder if it will make my insides come out. I used to enjoy trying new recipes...now I tread lightly. It also calls for arrowroot flour and I'm thinking that's a "junk" flour? Any help will be appreciated. Thanks!

I've had no problem with arrowroot. I don't have it regularly....I use it with my paleo gravy recipe as a thickener.

Marcia,

As Brandy said, arrowroot is an old standby for gluten-free baking. If I recall correctly, I believe Gloria mentioned that it is the only flour that she can tolerate in baked products these days.

Thanks, Brandy & Tex. A lot of recipes call for arrowroot so that's good to know. I think I'll pass on the chia seeds. I didn't know if grinding them up would make them less likely to cause an issue but after reading the link you provided I see that's not the case. There are plenty of other recipes out there. :smile: As always, thanks for your help.

Hi Marcia,
Chia is very nutritious. It contains 23 g fat of which only 4 g are saturated, 0.5 g of carbohydrates, 35 g of fibre (mostly soluble) and 21 g of protein. It also packs a good dollop of omega-3. It has 460 kcal per 100 g so eat it in moderation. It absorbs up to 27 times liquid so it should not be eaten dry as it can cause problems in the esophagus. I use it with my breakfast which is mostly oats with rice or almond milk. It really gives you a full feeling so you don't need to eat much for a long time afterwards. I have not used it long enough to know if it goes well with MC. Maybe others can help you there. I have not had any adverse reaction so far.
