Good news bad news
Ok the good news from my scopes is that there doesn't appear to be any cancer, will know for sure after testing gets back on some lesions in my bowel. Bad news is that it appears to him (my gastro) from looking that I have developed full blown celiac disease. So I have no idea what this means as far as treatment. But am ordering the cheaper version of entrecôrt from all day chemist. And then some serious investigation into where I am getting gluten! I changed out all my pans long ago, bought new toaster. Even insist on gluten free versions of meds. This is going to be difficult!!!

Why do you think it will be difficult??
Do you mean physically, making sure you are not having contact with gluten?
Or mentally /emotionally ??
Keep in mind that other ingredients can cause major villi damage, ie dairy, soy etc. is there a chance that gluten is not the main offender???
In line with this, have you had your Vit D3 level checked? Do you take Vit D3?

I thought it would or will be difficult because I thought I was doing good already with control but evidently I am getting gluten somewhere. I've been really serious about this now for a couple of years and thought I was gluten free... Evidently not. The doc said my small intestine looks very thinned out so I' m getting gluten on a regular basis which explains the non stop D.

If you qualify for an official diagnosis of celiac disease, then you have definitely been getting a significant amount of gluten in your diet regularly for years (because it usually takes years for enough damage to accrue to the villi of the small intestine to meet the criteria for a celiac diagnosis).
Does anyone use flour in your house? That's usually where gluten cross-contamination comes from, but if you are eating any commercially-processed foods, then those are prime sources of cross-contamination, also.

Vit D3 at a good level is important for minimising inflammation. You may need to supplement at a higher level and I recommend using magnesium spray to optimise use of Vit D3 in the body ...

I've been trying to be very careful about not eating gluten but I do keep cookies and stuff for the grandkids and when I go to my daughters house they all eat normally. I usually just eat meat or frozen dinners gluten free when I'm there. Which is only about two times a year. I do wash my hands after I get the kids cookies or fix them a sandwich but something I'mdoing is getting gluten into my system.

Beans can be an issue for many, if you react to soy..
If it was me,
I would increase Vit D3, make sure you are getting at least 600mg elemental magnesium per day, 800mg would be good.
Double check bathroom products etc for wheat, oat and soy,
I don't think gluten alone is causing the damage, given how much you are avoiding it and what you done cookware wise etc.
Yes being soy free is way way harder than gluten free, but if it is causing that level of damage, it is important to avoid it.
Make home made bone broth with your safe meats... This will help the gut heal...

Magnesium spray
Can one buy this at health food store like Whole Foods? How much magnesium? I know there is a % in my daily vitamins. Thank You

I have found that gluten free products on supermsrket shelves are not suitable for me. The gluten free products are produced in the same factories where gluten rich products are produced. The machines are not cleaned out and you may have quite lot of cross contamination even though they are labelled gluten free - they usually are not strictly gluten free. If you are serious about your heath - just draw a line under cakes, cookies, etc. and don't eat them anymore. I made a decision to finally grow up, act my age and take control of my health. I know what a cake tastes like, had it, done with it, moved on.
You need to do the same or you won't enjoy life, its a simple choice.
