Not only is doing our own cooking the surest way to resolve MC symptoms, but researchers are discovering that it obviously has other health benefits.
SUNDAY, Nov. 8, 2015 (HealthDay News) -- Nothing beats the taste and comfort of a home-cooked meal, and Harvard researchers say it also may help prevent type 2 diabetes.
The researchers found that for each lunch prepared at home in a week, the risk of type 2 diabetes dropped by 2 percent. For each dinner prepared at home, the risk decreased by 4 percent.
It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
I cook a tiny lunch for myself each day, usually in one pot. Make dinner for two every night. We only eat out with friends nowadays about once or twice a month.
Guess what, I'm not about to take a short-cut after reading the survey.

Ever since my husband was told that he could manage his pre-diabetes diagnosis with weight management (he's 6'3 and weighed 250), for the last 6 months I have been making him a Chefs salad with home made Caesar dressing (sugar free, only has mayo, balsamic vinegar, a dash of Dijon and salt/pepper and to thin it a little lemon juice - I left out the parmesan on purpose). I bought rubbermaid portioned containers and in them I put romaine, grape tomatoes, cut cucumber, thin slice red pepper, a substantial meat choice and a couple small cuts of cheese.
This has been his lunch and he lost 15 pounds enough to keep him feeling good and out of the drs office for now. Next step is to find good home made portioned controlled meals, which now that I am feeling better I can work on crock potting some things for him and freezing them.
I truly believe the scratch cooking is the healthier way. It does take some time and management but when it can be done it is so much better than store bought.

Every time I go through the "drive thru" for my kids, due to extracurricular activities, I feel horrible about it! I have always been a health nut on food, but now it's gotten worse. Sadly I just can't join in on the health food! I just wished my husband felt the same about eating out

My lovely partner, even though she doesn't have to, eats my funny restricted diet with me in the evening.
She's embracing my changes in order to help me not fall off the wagon. We now go to MacDonalds for black coffee and still spring water - she doesn't eat anything there anymore. I haven't been able to eat the MacD's food since 2010.
We have both made lifestyle changes together over my MC flare.
