Advice on cooking large turkey
Just wondering what the best way is to thaw a large turkey breast to avoid histamines before cooking? Thanks guys!

Probably in the microwave. Next best would likely be a water bath, since the heat transfer coefficient of water is so much higher than for air. The integral of time and temperature basically describes both the process of thawing and the development of histamine. We "think" that time is the most important parameter in the process of histamine development, and temperature is the second most important parameter, but we're just guessing of course, based on the observation that the shorter the time from frozen to cooking temperatures, the less likely we seem to be to react.
