An Australian science program did a good program about gluten, and why so many react to it.

some of the interesting points;
-they included discussions with Dr Fasano.
-a key part i found interesting was a wheat farmer stating that the processing of gluten was part of the issue.
cheaper methods were being used.
NARRATION
Wheat farmer Craig has another theory. He believes the rise in gluten intolerance has more to do with the modern techniques of processing wheat. He says the current methods of milling wheat may contribute to gut problems.

It's a very highly-refined process. The endosperm and the starch are milled down and all the other ingredients within the grain are extracted, and then they're added back in at whatever ratio or proportion the end product requires.

NARRATION
This modern processing produces high volumes at lower cost and is commonly used for the mass production of the sliced white bread that you find in supermarkets. That's why Craig now processes more of his wheat through a stone mill instead of a roller mill.
-they acknowledged that there were many people that were 'non celiac gluten sensitive'
-Another key point was made by a nutritonist was that processed gluten free products were not necessarily healthy.
things like Gluten free pancake mix, had higher sugar content and high calorie count compared to wheat based products.

That's very interesting information.........

Besides the ecomonical milling and reforming the flour to conform the sliced bread manufacturers also use product to lenghen the life if the bread. Proper bread should be stale the day after and used for toast when 2days old. Some if the sluced bread asts longervthan a week and remains soft.

I discovered ages ago that gluten free products were not totally gluten free and were also treated with long life products. Its my opinion ghat many if us may be sensitive the the product used to keep bread products fresher longer.

My standard advice to everyone is not to use gluten free products - they are not totally gluten free if made in the same machinery that makes gluten products. I won't touch them with a barge pole.

The link worked and the show could be seen here in the US. Nice presentation. Thanks for posting. I've enjoyed Dr Maryanne Demasi others Catalyst health airings in the past. One special I remember well was her presentation on statin medications and how little, if at all, they help prevent heart disease. I followed the uproar over that, as the medical community fought back as did many in the press, and in the end pressure was such that ABC Australia removed the program from being able to be seen in the future. Additioanlly on top of that around the same time came new medical guidelines in the UK and America, and I suspect Australia also, saying that cholesterol tests were no longer necessary requirements for prescribing statin medications. Instead the cholesterol lowering medication should be prescribed more liberally. Rather nasty fight that one and seemed to highlight the influence of the pharmaceutical companies, but who knows what happened behind the scenes. Some of that fight can be read at ~

I remember seeing recently a study on Dr. Kendrick's sight on statins showing that indeed they lower cholesterol levels well, yet on average a person that took a statin for say 30 years could expect to live only an extra month. Ugh.

I guess on wheat and why avoiding it has led to many testimonials of being wheat free helping improve health, I've read several different theories on it, everything from the type of common dwarf wheat grown these days being different from what was grown in the past, the insulin spiking theory, to processing techniques, RoundUP being commonly used to spray wheat, to fungal growth on wheat, barley, & rye grains and less commonly seen growth on rice and oats. What ever the answer is, it is nice that it helps.

Yes there was quite a bit of hullabaloo over that one! Cant let the truth get in the way of big pharma's profits.....

glad the program is viewable in the USA, for any MC'ers out there i thought it was a good explanation for family or friends.
and alot of what they said could also apply to soy (quality of product, processing methods, genetically not able to digest, inflammatory etc)

its about progress not perfection hey...

I thought this was a very good beginning to get the word out in a professional way, something I have not been able to get across to my family in a 'scientific' way so far.
