Thanks for the tip about the Coconut Bliss Naked Coconut, Jari. On your recommendation, it has been my go-to sweet all through the warm weather when I really crave ice cream.
A daily indulgence for me, especially during the very difficult Holiday season, is Lindt 90% chocolate. Two little squares are so rich that they do the trick for me. Make sure you enjoy them at a temperature above 70 degrees F. So good!

I may have to try the Lindt chocolate. I have tried some of the Enjoy life chocolate bars and I'm not crazy about them. Their double chocolate crisp cookies, however, are a different story. I love them! The sugar crisp cookies are good also. I don't have any trouble with any of them.

I have tried the Lindt 90% chocolate, but it is rich and a little bitter to me.....but I may change my mind if I try it again.
Jari, great news that the Enjoy cookies work for you, I'm definitely going to try and find them. I looked at Kroger yesterday, but no luck....I'll try our new health food store, they carry more than our other little store, so maybe I'll have luck.
Thanks to all of you for your responses!

Your Kroger doesn't carry them? They weren't in the regular cookie section.........they were in a different section with gluten free, etc. I'll look next time I go and try to tell you what area I found ours in, but we have a big King Soopers store. If all else fails, you can order them on Amazon. Just do a search for Enjoy Life and you should get lots of options. They have some bars and I tried the cherry pie one and it was awful so the rest of them went outside to feed the birds. They are a little pricey, but I figured I was worth it. Just don't pay those outlandish prices for them that some of them charge.
Here is a link for the double chocolate ones.......... http://www.amazon.com/Enjoy-Life-chocol ... fe+cookies
Only problem is that it is 6 boxes, but I absolutely LOVE them. And that's a good price because in the store they run between $3.50 and $4.00 a box. I plan to order on Amazon when I run out because I can't buy them that cheaply anywhere around here.

Hey Gabes, going back to that bone broth. If you are using a whole chicken to make the broth, is there any problem with eating the chicken meat or are you supposed to discard it? I did read a recipe that said discard any meat and vegetables you use but I can't see the problem with keeping the meat or even removing the meat after it is cooked and continuing to cook the bones. I mean if you were cooking a chicken meal in the slow cooker you would be eating the meat. What do you think?

Terri,
When I edit your last post in this thread I see that the "Disable BBCode for this post" box is checked again. You may have to manually uncheck that box if you want to use quotes. Either one of your browser settings or a firewall on your computer operating system may be doing that, or you are somehow accidentally selecting it when you post. I checked your profile, and the setting there is still OK.
Just thought I'd mention this in case you try to post a quote and discover that it doesn't work.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Hey Linda
Yes I do eat/use the meat from the bone broth
I enjoy its soft easy to eat texture - 'pulled meat'. I sort of giggle as 'pulled meat' has started to become a bit of fad for meals in restaurants etc.
I have been eating it for years.
so long as it is hot or reheated it wont have any excess histamine

on the day i make the broth, I leave some in the pot and then make a lamb + vege stew.
this has been my lunch most days for the past 6 years.
I freeze it in meal portions. It is also nice with a couple of eggs for breakfast.
having meals pre-prepared makes sticking to the eating plan heaps easier.

a little bit of coconut amino's, made by niulife - https://www.niulife.com/
is a MC safe way of adding some flavour.
A bit of rice flour or the Orgran Gravy Mix is good way to thicken it.
I make the stew with grated parsnip and carrot.
