Hi Terre,

Some people claim that unrefined coconut oil is healthier because some of the beneficial elements are removed during the refining process. I have no idea how significant this loss might be (if it exists) because no one ever includes any numbers to support their claims.

Refined coconut oil is more suitable for frying though, because it has a significantly higher smoke point and it does not add a "coconutty" flavor to the foods fried in it. Of course some people who like the flavor of coconut might prefer unrefined coconut oil for frying.

Hi Tex,

Thanks for the information. I use coconut oil more and more and appreciate it very much.
Just recently discovered how to make bonbons and fudge with it. With dadels, raw cacao and coconut oil. Really delicious if you like to have some chocolate and you can't eat the normal one because of the milk and/or soja.
Of course it's oil/fat, but the latest news is that fat is not bad and you better eat oil than sugar!

Hi Sonja,

I wondered what dadels were, so I had to look then up. We call them dates.

Would you mind sharing our recipe for fudge? I haven't had any fudge in many years.

Hi Tex

I took a look at my old posts and found out that I have forgotten a lot. I read about my migraine in the beginning and yes, like you or someone else said, it disappeared when I was healing and never came back.
But I also noticed that I missed your question about the receipt of the fudge. I am really sorry.
I still make it very often and here it is:

125 gram dates
100 ml coconut cream
50 gram cacaopowder
75 gram coconutoil
1 teaspoon vanilla powder
if you like: walnut, almonds or other nuts

I always make 2 1/2 x as much because it stays well for a long time.

The coconut oil has to be liquid, so you have to warm it a bit.
You put de dates and the cream in a blender and mix it until it is very smooth, then add the oil and at last the cacao and mix it very well. Then you put it in a flat scale and I put nuts on the surface, but that is not necessary. Put it in the fridge to become more stiff.
It is easy, but addictive......

Hello Sonja,

I appreciate your reply, and your recipe, but unfortunately, during the last year or two I've been having major histamine issues, and so I can no longer eat chocolate. But maybe others will benefit from this recipe, because it looks good.

Hi Tex,

O, I am sorry for you. Maybe it is good you did not get the receipt earlier, because that surely would have worsened your histamineproblem.

Besides this receipt I have one which I make since the same time. It is paleo nut bread, more cake than bread. Shall I write it down for you?
It is with almond flower, raisins, eggs and nuts. Very easy to make and tasteful.

I used to love to eat things like that, but I had to stop eating them because I always ended up eating too much. I used to love to eat banana bread, t0o, but I had to quit, because I always ate too much of it. When I was younger, I worked hard, so I burned plenty of calories. Now I'm too old to do much work, so I don't burn enough calories to be able to eat things like that without gaining weight — most baked goods contain too many calories for me. I try to eat a low-carb diet these days. But someone else here might like to have the recipe.

I appreciate the offer, though.

Hi all,
here is the receipt for the paleo nut bread

200 gram almondfower
1 apple grated
100 gram raisins
100 gram nuts in pieces
30 gram coconut shavings
1/2 teaspoon baking soda
salt
2 eggs
50 gram liquid cocosoil (or olive oil)
1 dinner spoon lemon juice

Warm the oven on 175 degrees.
Mix everything together in the blender. Add the nuts in the end to keep them whole.
put it in a flat scale (22 x 22 cm)
Bake it in the oven for 25 minutes.

I hope you enjoy it.
It is a pity you can't have it, Tex. Maybe on a special occasion.....
