Thank you, Tex. I didn't know about the bison cross breeding problem! Makes me sad and frustrated! I order my marrow bones and roasts from a ranch in Wisconsin. I'll just have to step out of my box and learn how to cook new meats I'm not so familiar with. I can't eat turkey so think I'll begin with duck and elk (which I have eaten). Maybe I'll get really adventurous and try kangaroo!

As Gabes said kangaroo is not a staple here in Oz. I find it too gamey for my taste but if you are avoiding cholesterol it is meant to be a good choice of meat. My integrative doctor stated on some information he gave me that if you have problems with the casein in dairy then you may also have an intolerance to beef.
