Question about beef

Post by terre »

I know it is recommended to use meats that I am not used to consuming. I have been calling local meat processing in our area and one said they butcher beef and that I could have the bones on a day that they are butchering.

Would it be okay to use beef bones for my bone broth? I just thought these bones would be better quality than going to a grocer and not knowing where they come from.....but I can't be sure what a local farmer is feeding his cattle. We don't have a Whole Foods that sells bags of frozen bones, so I am very limited in my options.

How I wish I had started making bone broth at the "start" of deer season.....my husband is a deer hunter. I did end up with some bones from one deer and the broth was very good. So next year I will be able to have venison broth (if my husband gets a deer).

Thanks,
Terre

Hi Terre,

Sure, unless you know that beef is a major problem for you, those bones should be a good choice. And since you will be getting them on the day they are processed, they will be much fresher (and probably a heck of a lot cheaper) than you would get from virtually any other source.

Thanks Tex! I just had it in my head that I needed to do what I haven't eaten (like venison, lamb, goat, etc.)

I was excited to be getting the bones from the processor so this is good news. I'm not 100% sure, but I think they are going to give them to me (doesn't matter, I'll gladly pay). Now, I can't be too picky on what I get, but that's okay. She even said I could come the next week on their processing day and get more. I called another processor and he wasn't nearly as nice, probably didn't want to mess with it....can't blame him.

This makes me smile  doesn't take much to make me happy.

Oh my goodness! When I went to pick up the bones, I think they put in the bones of the whole cow! I'm not complaining, just surprised....so nice of them.

Since I have an overflow (after sorting through), how long can I freeze them for?

Terre

PS: Guess what I'm cooking today?

I'm no expert on food preservation techniques, but based on my own experience with other food items I would think that you should be able to keep them for at least 6 months to a year if they are protected by packaging to help hold their moisture content, and the temperature is maintained at zero degrees F or below.

Thanks Tex! I hope I packaged them well enough as I think you are correct about it being an important step. I will hope for the best!

How awesome!
soo good to have a reliable source of good bones.

you can freeze the bones for up to 6 months.

on thursday, a friend of mind did a bulk home delivery order of a whole lamb, half pig, half cow (grass fed meat) she too got all the bones and wasnt expecting them. I was the first the person she called to see if I want them! so i have three batches of bone broth worth of bones in my freezer

I don't know how reliable, but I'll take what I can get and be thankful. I have no idea what they've been fed, but I saw some cattle in a pasture....I kind of felt guilty when they looked at me as I drove past.

Wow, lamb would be awesome....congrats!
