Questuion about a few food triggers or many

I'm curious if there's research/information on why some of us have a few food triggers and others have many(from EnteroLab testing). I tested positive for all 15 items tested.
And have found more since. Does that mean more extensive inflammation? Longer term, more years of toxic foods being eaten? I also have hypothyroidism, osteoporosis and osteoarthritis. Are those contributing factors?

Most of the health issues you mention are related to nutritional deficiencies, like Vit D, magnesium etc.

There is a combo of factors that contribute, genetics, deficiencies, inflammation, excess of toxins /biotoxins.

Another aspect to managing inflammation and health issues is methylation cycle. It links to cell health, gut health and how our bodies cope with toxins, clear excess toxins. Methylation affects every organ and system in our body.

I'm not aware of any formal research that has investigated the connections you mentioned. But our personal experiences here suggest that cases that are promptly diagnosed and promptly treated are much more likely to resolve much faster than cases where the disease was not treated until years of damage had accrued. This implies that additional food sensitivities may be more likely to develop when treatment is delayed.

We also know that in cases where MC is drug-induced, if use of the drug that caused the symptoms is stopped soon enough, the disease will often resolve with no further intervention necessary. But if exposure to the drug continues too long, enough damage will develop to trigger food sensitivities that must be treated with diet changes.

So it's probably logical to suggest that the length of time over which the inflammation persists, and the resulting level of damage that accumulates, have an effect on the number of food sensitivities that develop. AI diseases are the result of chronic inflammation. It's a self-perpetuating condition, because chronic inflammation causes food sensitivities and food sensitivities cause additional inflammation, which leads to the development of additional AI diseases. But AI diseases don't cause food sensitivities. It's the other way around.

If we look back, many of us can see evidence that we had food issues for many years, or even most of our life. I can remember having constipation problems when I was only a few years old. I was probably sensitive to gluten early on, but more serious clinical symptoms didn't develop for many decades. I was in my 50's when my digestive system began to swarm on me.
