2 1/2 c almond flour
1 T cinnamon
2 tsp baking soda
1/2 tsp salt
2 C grated carrots ( or substitute: grated zucchini, canned pumpkin, bananas, etc)
1 large apple, cored and grated
1 C shredded coconut
1 C raisin (or dates) I substituted chopped nuts
3 lg eggs
2 T honey (optional)
1/2 C coconut oil or avocado oil
1 tsp vanilla.
This is a muffin recipe posted by Sheila.....is there anything a newbie should avoid? If anyone has made them, can you reduce the amount of flour....it's a long post, but it seems that I read somewhere that you could reduce the amount of flour.
I make these all the time and ate them probably 3-4 months into my diagnosis. I love them.
I only use 2 cups of flour (and I use 1 cup of almond flour and 1 cup of coconut flour)
I don't add the apple or the raisins...........I make mine strictly with either 2 cups of zucchini or 2 cups of bananas.
I use the Energee replacement eggs and it works well (although I don't seem to have trouble with cooked egg in foods so I may try real eggs the next time I make them.
I don't add any additional sweetener (I added the honey once and they were just too sweet for me).........may be because of the coconut flour (it's pretty sweet).

Thanks for replying Jari, it's good to know you can reduce the flour a little....that's what I'm planning to do.
Would there be any problem with adding the raisins and/or coconut.....or should I hold off till later in the healing to add those? I would like to at least add the raisins and planned on chopping them a little. I have made them with the zucchini and apple, but just need a little more "umph" if possible.
I just am not a fan of raisins.......so........I don't see a problem if you can handle them..........
One day soon I want to really crush the nuts and try adding those in...........I can't do raw nuts but hoping that finely grated might not be a problem.

As always, Gabes, I appreciate you looking out for us! I would use zucchini (peeled and grated) and apple (peeled and grated).....maybe the dried raisins would be better omitted at this time. What about the coconut....would that be too much fiber? I'm not adding the nuts. I was just trying to make them a little sweeter.

I followed more of what Jari does with 1 cup of each kind of flour, used bananas and no raisins or apples. The dough was not at all a batter but dry and thick. The first batch of muffins was just a crumbly mess. So, with the rest of the dough, I added more coconut oil. The next batch was hardly better. All had to be tossed out. All I could do was laugh!
Any suggestions?
I don't know what to tell you! I don't have any trouble with them being crumbly! I have another recipe that I'm using now making them with just almond flour as I can't get the coconut flour as readily as I used to be able to, but I made them forever with that very recipe.

Coconut flour tends to dry things up ....you need more moisture such as what was in the apple.
If you are using all the wet ingredients in the recipe minus the apple and only using banana and eggs for the moisture...then you may need to add a 1/4 cup of almond milk or coconut milk or another 1/3 cup of a fat such as Earth balance butter.
Moisture is your necessary ingredient
