A few questions from a newbie

Most "non-dairy" creamer in the US contains casein and soy. Apparently dairy is understood to mean lactose, and they can get away with using casein in it. So if you're sensitive to casein, which is a pretty good bet if you have MC, I'd give it a pass.
However, the creamers based on almond milk or coconut milk should be safe. I don't think they taste as good, but that's a matter of preference. I moved from using coffee as something to put my cream and sugar in, to drinking my coffee black. I didn't like it sweet with no cream.

I have been using Cashew milk (it comes in regular plain - which I think is creamier and non-sweet vanilla added its fairly creamy but not as heavy as regular)....it has helped a lot in the 'creamy' dept. I never used to be a coffee drinker, but this little combo is a nice change to my somewhat bleak diet, lol..

I'm curious as to what kind of cashew milk ice cream you bought? I am always on the lookout for ice cream (it's a weakness of mine)..........in fact, seriously thinking about making some homemade with coconut milk.............not sure how that would turn out, but it's worth a try!

It's So Delicious Cashew Milk non-dairy frozen dessert. I have tried both Creamy Cashew and Chocolate Truffle. Both are good, and richer than I like, so most people would find them good, I think. I, strangely enough, like my ice cream more icy than creamy.
I bought it at Kroger. Sprouts also carries it.

interesting... the so delicious products (usa made) that come to Australia have guar gum in them that is soy based and I react to them. I have tried the coconut milk and coconut ice cream.
it may be that because soy is a far bigger trigger for me than gluten - the small amount causes me issues.

I suspect that Gabes comment about being soy-based was in reference to the guar gum — it's a legume (but not actually soy).

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Yeah, Tex, I thought about that after I had posted it. It does have that in it, but I have eaten it in other things and it hasn't bothered me. (Knock on wood). I just tried some because I had to go to the store anyway. They had the chocolate truffle one, so I bought one and brought it home and ate a few bites of it. It's very good, but it is very rich!

I seem to tolerate the gums OK, too. I need to look around to see if I can locate a source of that ice cream.
