Vegas Trip Update
Thanks to all of you for your well wishes. We just returned home today and had a wonderful time.
I packed a lot of cold food to take with me and I highly recommend this bag if you ever happen to be looking for one: http://www.ebags.com/product/ebags/crew ... d=10110543
It holds quite abit and I was able to put my iPad in the top. I used ice in baggies for the bottom layer and it keeps it very cold and I had no trouble going through TSA either going or coming........I forgot to take it out and the next day, it still had ice in it.
I packed it full of food and actually only ate a few things out of it. I decided I wasn't going to mess with a hot plate or anything like that. I was able to find food just about everywhere we went. I do really well with Nachos.......they always look at me funny when I tell them nothing dairy at all on it, but I had nachos in 3 different restaurants and never had a problem (I don't have any trouble with tomato based foods either). Chips, some beef on top with a little salsa and guacamole and I get what I need. I actually even tried some fresh fruit (I didn't overdo it), and did ok with it also (the pineapple was to die for).
We had a marvelous time......lots of walking and exercise that I haven't had in ages, and I learned that I'm not totally back to 100 percent because I did get really tired, and am exhausted today, but it was so worth it!

Hi, Jari. That's is fantastic!! I wondered how you were doing and am so glad you enjoyed your trip! It's so good to be able to travel and feel "normal" again!

Thanks Gabes and Marcia,
Hard work does pay off! Now, back to my really safe foods for awhile to let anything that might have gotten upset, get back to normal. I forgot to mention that I did take a gluten ease before I ate each time.
I am also about 50 pounds lighter than I was the last time I went and it sure makes a difference.

Donna,
I bought deli Boar's Head Oven gold turkey that I divided up into individual meal packets (3 or 4 of them), and I found some beef jerky and bacon jerky that I divided up into snack size portions in small snack baggies (and although I'm not really fond of beef jerky, I found some that was safe for me and it's easy to travel with and is a good source of protein if and when you need it). I also make those banana paleo muffins (recipe is somewhere on here......that's where I found it), and I freeze those with 2 to a package and I threw in about 4 packages of those. I also included a couple of little fruit cups (I can eat the peaches and pears that are not heavy with corn syrup but in juice), and a couple of applesauces. I also have some protein bars that I'm not fond of at all, but that will work if I need protein, and I put a couple of those in. I packed some other stuff that didn't necessarily need cold. I ended up bringing most of it back home, but it made me feel better that I had it if I needed it.

I forgot to post the jerky.......
This is the kind that I really like and do well with:

I found mine at our local Albertson's (which I believe has now been bought out by Safeway).
