amylopectin intolerance...the worst intolerance.

Post by nsaidcolitis »

I can't get over this flare mainly because I have gastritis as well and it seems now i'm intolerant to virtually ALL Starches which were my only safe foods. The only way for me to tolerate them is to eat them undercooked but that causes a little pain (i have gastritis). If cooked past a certain point, my tummy gets inflammed. I can't eat potatoes, oatmeal, rice or even carrots if they are cooked for too long and if i eat them ....i'm imflamed for days/weeks.

Yet when I cook rice, potatoes aldente (i chew 40 times and it doesnt taste sweet). My symptoms are gone.

Strangely enough i can tolerate rice biscuits and chex cereals, contacted the company and they told me they cook the grains in a matter of seconds in the oven, so probably that avoids overcooking them. Can also tolerate corn cereal / corn biscuits...etc. But some companies overcook their products i tested them and its usually those made for babies.

I really have no safe foods to get over this flare, it is very strange. I can't use PPIs/h2 blockers because they have weaken my LES so much I had severe reflux from them.

Is there an enzyme or a supplement i can take to start digesting regular starch without having to worry about overcooking them? Rice is the worst offender because virtually everyone overcooks it, oatmeal the second, potatoes the least...i have to boil them for 13-15 min tops otherwise...im in trouble.

I can't eat just meat and vegetables....because of the gastritis it burns like mad but i do know i digest it well.
I'm stuck. All i can eat is chex cereal potatoes carrots (provided they are not overcooked)....well i can eat all starches but i rather avoid oatmeal rice and other grains because theyre very hard to get them right for me.

ty for ur suggestion i havent tried it but maybe i will. Today i ate nothing but egg whites, chex cereal, almond milk, carrots and (al dente) potatoes symptoms going away slowly. I eat too much chex cereal and the almond milk has a lot of sugar, im scared of diabetes.

Bone broth i havent tried it because i have gastritis and calling up acid without "bulk food" to soak it up is asking for trouble...but maybe if i add carrots I could. I heard its very healing !

When a person is flaring there is no such thing as eating too much of one thing if it is not making you react to it. You need to eat, and all the rules go out the window when in a flare....eat all things many times that do not make you react until you get to a stable point again.

I highly recommend the Bone Broth.....easy to make....cook off a safe protein with bones, remove meat set aside in fridge, fill crockpot with water and add bones and some salt....add some carrots too! Let this cook a good long while maybe put it all together and cook over night. Strain out the carrots (by now they have zero flavor because it all went into the bone broth:-) Get some containers that you can Freeze....add this broth to the containers with the meat you put in the fridge.

OR
put the bone broth on the stove in a heavy pot and bring to a boil and add new carrots (or hearty vege of choice) and when they are soft add some gluten free noodles til al dente' and you can have a Cornish Hen, Chicken, Turkey or what ever noodle soup  season with sea salt iodized.

i will try the bone broth after i calm down this flare a week or two is enough. Everything is going good now, eat cereal 3 times a day with potatoes carrots and egg whites, seem to both coat my stomach and avoid inflammation. I'm scared of diabetes though.

Funnily enough, the rice biscuits i used to tolerate and eat are now very soft and more "sugary", i suspected they overdone the rice flour in the oven...and i was right. Contacted the company the new batch of biscuits will come in october... My tummy started making sounds on the first bite. So I will avoid them for now, that company is not as reliable as general mills. Rice chex cereal is probably the best gastritis healing food i've encountered.

I just found out nature valley made their oat bars "softer", they were very good for me in the past the only problem was as in this video: https://www.youtube.com/watch?v=gdSYzLuumYw ...they were very hard and i also have gastritis which doesnt like hard things. it was painful on the way down too much fiber but less inflammation than overcooked oatmeal.

I hope the news are really softer. Being bound to the kitchen sucks, it'd be nice to go to class without having to worry about food( cant have empty stomach on gastritis).

This is definitely the worst intolerance. Maybe im the only one who noticed it and a lot of people have it and call it "starch intolerance" but in reality is some chemical after starch is cooked for a certain time/temperature or too much amylopectin for which we lack the enzymes to deal with.
