Avocado and Sweet Potato Salad

Avocado and Sweet Potato Salad

Sweet potatoes and avocado....who knew that two of my favorite superfoods would taste so good together?

Ingredients:
4 cups of cubed (1/2 inch squares) roasted sweet potatoes, chilled
2 avocados, peeled, cored cut into 1/2 inch squares
6 T Asian Vinaigrette http://www.perskyfarms.com/phpBB2/viewtopic.php?t=15846
1 cup spring mix (or Kale or spinach...whatever green you like)

Gently toss the sweet potatoes and avocado in the dressing and serve over greens. Makes 4 servings.

Great as a side salad or you could add chicken for a full meal. I like to sprinkle on some walnuts for crunch.

The recipe has kale. Can I eat kale if I'm not yet in remission?

According to Monash recommendations only eighth of an avocado is safe for MC people. Also are apples safe to eat?

Any and all fruits consumed while still recovering from MC should be peeled and overcooked. Monash University's discovery was that avocados contain a unique combination of sugars/carbohydrates. Avocados contain perseitol, a unique sugar polyol specific to avocados They contend that perseitol can promote the infusion of extra water into the colon.

This is similar to the recommendations made by most doctors that coffee should be avoided by MC patients (because coffee is a secretagogue). But we've found that as long as we don't add an unsafe flavoring to our coffee, for most of us, coffee doesn't affect us any differently than it did before we developed MC. If it has always caused us to need to visit the bathroom after drinking a cup, then that will continue to be the case. But based on the shared experiences of thousands of members here, coffee is a generally safe beverage for most of us.

I maintain that Monash University's discovery regarding avocados may be of academic interest, but it shouldn't concern us, unless we insist on eating avocados before we reach remission. Since eating fruit while attempting to recover from MC is not part of our recovery guidelines, their finding is a moot point. Once we're in steady-state remission, virtually all fruit should be safe, and it will typically promote better bowel movements
Don't include fruit in a recovery diet, but after remission has been maintained for several months, at least, fruit, including raw fruit, should be safe for virtually all MC patients.

Regarding your question about apples, if you're going to eat them while on a recovery diet, make sure they are peeled and overcooked. After being in steady remission for a while, raw apples (and unpeeled apples) should work just fine.
