Two days down, and Iamb doing okay. Tonight I am making potato salad for a picnic. I made this commitment a month ago, so I am doing it. It is really hard not to taste it, but I haven't done it. I am staying focused on how I almost immediately feel sick after eating mayo. I am hoping to find a recipe for mayo made with olive oil and practicing making it. Thanks for the words of encouragement. I am wondering, of course, how long I can expect it to be before I notice any beneficial effects of not eating gluten or soy. Thanks again. Bernice and my sweet Octane. (Octane is my very sweet black lab Seeing Eye dog.)

It's impossible to predict how long it will be before you begin to see improvements due to the diet changes. That depends on how long you have been reacting (longer reaction times mean more intestinal damage), your genetics, and whether or not you have any remaining food sensitivities in your diet. We are all different, so time predictions don't mean much. They can range from a few days to a year or more. In most cases it takes a few months to see significant improvement unless budesonide is used to mask the symptoms until the diet changes have time to work. Except for kids, the gut heals very slowly.

Bernice, Give it 8 weeks or so but be aware that some people see results much much much quicker. I don't want you to get discouraged if you don't see results in a week if that makes sense. Everything Tex says is dead on. Those that have been reacting for say 20 years seem to take longer to heal than those that have been reacting for two months. It is variable. Whatever you do do not give up.

I am still trying to work out the logistics of this site using my screen reader. Does the response go to everybody or to the people that responded to my post? I will probably try the mayo this weekend, thanks. I figured 2 months would probably be a good trial period. I have had symptoms for about 2 years. I am still trying to handle the effects of using a PPI for many years. For some reason, eating complex carbs like bread, crackers, and pasta seemed to help minimize the acid feelings. So I am trying to find something that tastes good and fills that function. I also need to be careful of the calories. Tex emailed the book to me several months ago in a format I could put into my Braille PDA, so I have already devoured it already. I would expect that it didn't have any soy or gluten! Bernice and the sweet Octane.

I had a little flare of symptoms last week due to a food additive known as agar, that I apparently cannot tolerate, but the reaction finally ended yesterday. I noticed that my watery diarrhea was extremely acidic. That isn't always the case. The degree of acidity, or lack of it, can depend on what is causing the reaction. Many of us have what we refer to as "battery acid" diarrhea if we eat dairy products, for example. But for others, dairy products can cause constipation.

You may need to take zantac or some other H2 blocker for a while, as needed, to help reduce the acidity if it's a significant problem.
