Chocolate coconut milk ice cream

Chocolate coconut milk ice cream

I ran into this drop-dead-easy recipe. Tried it and loved it, so thought someone else might enjoy too! It is so satisfying that one or two spoons is enough to stop a craving.

1 can full fat coconut milk
1/4 cup plus 2 Tbls cocoa powder
1/4 cup honey ( or maple syrup for vegans)
1 teaspoon vanilla extract

Combine all ingredients in a blender and blend until smooth and creamy.
Adjust the flavor to your taste ( I didn't adjust anything)
Transfer to a freezer-safe container. Place in freezer for 4-6 hours (until firm).


It comes out tasting to me like a fudge cycle.

Thank you, LauraAnn! I recently try SoDelicious (or whatever the brand is) plain coconut milk ice cream and I liked it and was able to tolerate it. It has a lot of other ingredients, though so this sounds great!
