and you get to be a bit of a scientist tweak the recipes a bit to to suit what you are eating now

you dont have to make them as muffins, you could bake the mix in a slice tin /cake tin and cut it into squares
OK. Thanks. But I am unable to evaluate those recipes the way you are able to, Gabes. Because you are an MC food expert and I am comparatively clueless. So Google is not my friend just yet.
For example, here is the recipe I think you were referencing on the forum.
2 1/2 c almond flour
1 T cinnamon
2 tsp baking soda
1/2 tsp salt
2 C grated carrots ( or substitute: grated zucchini, canned pumpkin, bananas, etc)
1 large apple, cored and grated
1 C shredded coconut
1 C raisin (or dates) I substituted chopped nuts
3 lg eggs
2 T honey (optional)
1/2 C coconut oil or avocado oil
1 tsp vanilla.
I know enough on my own to replace the veggies with bananas, use duck eggs (after I asked about them yesterday) and cut the raisins/dates/nuts. Here are the ingredients I don't know if I can have at this stage: almond flour, cinnamon, baking soda, shredded coconut (now I know to use coconut flour and coconut oil thanks to your response above), honey, vanilla. As you can see, I am unsure regarding just about everything in them! I am not much of a cook but I know muffins need a basic backbone...am I to assume that all those backbone ingredients are OK for someone on the healing diet suggested on the forum? One of many things I've learned from you kind and generous people is that I should not assume anything when it comes to ingredients (rosemary and celery extract come to mind). So my ability to evaluate this forum recipe or to Google "savory Paleo muffins" and evaluate any given recipe for suitability is, to use a word that Erica used and that I love for it's rich conveyance, pathetic.
When you mention protein powder I don't know if I can use that now. Or canned pumpkin, as you also mention. This is why so many suggestions lead to more questions from me.
Again, I apologize for all the questions. I must be getting on your nerves and I am loathe to do that...I am so sorry! But I get confused so many times. People post what works for them and suggestions for me and that is awesome. But since I am still in the healing diet phase...what I am referring to as phase 1 based on

I read all these food suggestions and am not sure if people are responding to me with suggestions of what to eat now or what might work for me after my colon heals. All my questions have been asking about what I can eat now and I have tried to make that clear. But maybe I am failing at that. Or maybe I am just completely confused.
I realize people are trying to help me because I am bereft without a breakfast protein and a snack protein. That's what you were doing when you so kindly wrote this "the other option given your circumstances is doing a coconut flour type paleo muffin/slice with minimal ingredients". And I am so grateful for that. But I really want to stay on the suggested healing diet (or as close to it as I can) because I want to heal my colon so that I can get to the point of trying to figure out what I can and cannot eat.
Maybe I just need to stop posting for a while. The last thing I want to be is an aggravation to you lovely people.
