Rice Chex Mix Recipe

Hello. Happy 4th of July from rainy PA! I was searching the recipes and I came across one from 2009 that was posted by Dee. It sounds a lot like the Chex Muddy Buddy Recipe which I thought I would never be able to eat again. The recipe calls for Earth Balance margarine. I don't use it, does anyone use it without any negative reaction? I'm always hesitant to try anything new because I like to keep my insides in where they belong. :lol:

Hi Marcia,

If you decide to try it get the Earth Balance that is labeled soy free. In my town there are two facings on the shelf, one Earth Balance with soy and one that is soy free.

I've used the Earth Balance in the past but I had to eliminate it and was reacting to something in it. There are a lot of ingredients in it. That being said other MCers can use it.

I saw the post with the recipe and I think it would work out okay using the refined coconut oil (no coconut flavor). I'm okay with ghee also. The recipe looks good. If I were to make it I'd probably use coconut oil or a 50-50 mix of coconut oil and ghee.

Keep us posted on what you try.

I agree with Brandy - I have slowed my use of the similar product to soy free earth balance that is available in Aus as it is not 'good fat'
I have been using ghee and coconut oil as replacement

Prior to this, i have used that soy free type product in cake /biscuit cooking for over 10 years. even before I was Dx with MC

Thanks Brandy & Gabes. If I try it I will use coconut oil and ghee. I haven't tried ghee but I would prefer to use that combination rather than a product containing a lot of ingredients. I probably won't try it until the holidays but I was thinking it's something I could eat along with my family and they probably won't notice the difference. I'll post if I make it. I found an ice cream recipe that I want to try, too. I recently tried the So Delicious coconut milk ice cream and didn't react to it but it contains guar gum so I'd like to make my own.
