Holly, good luck with the egg replacer! I'm definitely not a baker so when I used it, it was gummy. If you figure it out, please let me know. I buy duck eggs that my mom uses to bake bread for me. It works well for me. They are hard to find, it took me 3 months to find someone who had them. You might try that.

Thank you, Martha E! It's always great to hear when someone with multiple food issues finds something like duck eggs that can make such a difference for them! I may look into those in the future after I've gotten my inflammation under better control.

As a side note ... am still researching and slowly stocking up my "new" baking products to try. The problem with this approach, however, is that the Enjoy Life chocolate chips I purchased (per the recommendations here) are SO good and I tolerate them SO well that they're almost gone!! This might be my new baking style, hehehe!! (Very energy efficient, I must say ... )

Will definitely post again when I actually do try something with some of these unique ingredients that goes in the oven!!

I don't have trouble with as many ingredients as you do, but here is a good guide to making a gluten-free mix, where you can pick the flours for the whole-grain and the starch parts.
