I am presently on the east coast auto train and Amtrak was soliciting comments so this is what I left. (I'm not usually a comment person.)
I have collagenous colitis (microscopic colitis) and celiac disease and must eat gluten free due to both diseases. I usually eat only the baked potato on the auto train but it makes me sad when everyone else gets a full meal. Is there a reason the steaks cannot be made gluten free? By the way I like that the baked potatoes are served unsliced (jacketed) so I know it is guaranteed gluten free. I see that you accomodate Kosher and Vegan special meal requests in advance. Sadly, eating gluten free is not a lifestyle choice for me it is a medical requirement. Regards, Brandy

On behalf of all of us, thank you! It wouldn't be very difficult to have options for us.

Excellent!

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Well done, Brandy!

I'm glad to see you are still posting. You and I started the MC journey together. It's been 5 years! I hope to get back on here more often.

Take care,
Carol
