homemade soups

is it ok to make homemade soups without dairy products...i have a few recipes that call for potatoes as the thickener, veggies such as carrots or cauliflower, butternut squash, etc or even a tomato-free minestrone? it seems that since "safe" vegetables need to be overcooked, a soup might be a great lunch idea. i would avoid herbs and onions, etc. at this point but am looking for some versatility in my menus.

I make soups more so soupy/stews with home made bone broth.
I use my safe veges (for me is carrot, parsnip, cauliflower, sweet potato) and lots of meat, so that it is 5/8 protein and 3/8 veges type ratio.

I made a cauliflower and sweet potato soup the other day, it called for 2 garlic cloves. Its been a year since I'd eaten any garlic, so that was nice. The cauliflower was roasted in the oven.

thank you, martha e. as soon as the weather changes, i'm going to try some soups. that has always been a comfort food and i appreciate your input and advice. while the garlic sounds mouth-watering, i'm still on a very strict elimination diet. as soon as i progress to stage two eating, i'll begin to attempt adding some foods - last night we had pork chops - to see how i can adjust to these changes. gradually, i'm optimistic that i'll be able to return to my "foodie" stage with a clear idea of those offenders and safe defenders of my health.

I like to make a creamy soup with cauliflower and broccoli and then I use Coconut Cream ( on Amazon) which is very thick and is just coconut and no Guar gum.Or I use a can of coconut milk which I get at Trader Joe's or Natural Grocers which also is just coconut and water and no Guar gum or other additives. I cook both veggies in water or broth and then use my immersion blender to make it as smooth as silk. Then I add the coconut cream or coconut milk and freeze batches.
The other favorite is cauliflower and carrots blended together with the Coconut cream. Delish!! It has the texture of cream of potato soup. I don't add mat but that's a possibility. To me, it's a comfort food....
