I will be driving through there in a few days to go to Gatlinburg with the family.
It took about 3 or 4 months before I started gaining the weight back. I got down to 105, that's what I weighed in high school. It will come back. I had to stop weighing, because it really worried me. Try to find your safe foods and eat them at every meal. Just a few items. Mine were turkey, Jasmine rice, potatoes, and cauliflower and water. After a couple of months you can add on to your safe foods. Ask a lot of questions. We all want to help!

Dear Kelly,
I make my own "bread" (really more like flat rolls) using a recipe from The Super Allergy Girl Allergy and Celiac Cookbook by Lisa Lundy. It uses rice flour, tapioca flour, millet flour, eggs, and almond milk. If you can eat those ingredients and want the recipe, I can PM it to you.
I've eaten both Udi's and Rudi's bread. I prefer Rudi's. Also, I just tried some gf bread from Aldi, and it is quite nice.
