Pecan Pie
This is the recipe I followed for the pecan pie:

The local place that I get my gluten free bread has a frozen pie crust that I used.
I didn't use a full cup of coconut sugar because it didn't need that much. (my opinion of course, but everyone else thought it was fine also). I used about 3/4 of a cup.
Instead of the butter, I used coconut oil.
I also didn't put in pecan halves. I chopped them up to really small pieces (because I don't do well with big chunks of nuts, but chopped up I do fine).
I got my pure maple syrup at Costco for a much better price than grocery stores and other places.
It's VERY good!

Thanks, Jari. It will be nice to try something different! I haven't tried nuts yet but I was very tempted to have some of the cinnamon roasted almonds that I made for Christmas. They smell so good they were hard to resist!

a fruit crumble is easy - use safest fruits -ie mostly apple and maybe small amount of other fruit

cook the fruit, put in dish, make the crumble and bake!
only have a small serve first off - then wait 18-24 hours and have another small serve.

adjust something like this to your safe ingredients - ie replace brown sugar with coconut sugar

replace vegan margarine with safe butter replacement or ghee or coconut oil

Gabes Thanks for all the ideas and replacements. I will make the crumble this week. Having the replacements you mentioned is handy. I just put in a batch of muffins using pecan flour in the oven. It is already New Years where you are so Happy New year to you! I usually go around the house singing I feel good I feel great! Thinking positive.

Janie, So glad that you were able to enjoy the apple crumble! It is wonderful when we can eat something "normal" and be okay with it. Gabes, please send some of your heat this way. It has been extremely cold in PA the last few days. I finally walked my dog today. I walk her every day but it was just too cold/windy and I missed the walks as much as she did. I wore snow pants even though it's not snowing but they kept me warm. That's the nice thing about getting older - I don't care what I look like as long as I'm comfortable.
