Rice Krispy Treats

I made these yesterday and had no consequences at all, and boy were they yummy! While I wouldn't make them all the time as marshmallows have a lot of corn syrup and other in it, it didn't bother me.

6 cups (pretty much the whole box) of Mom's Best Cereal Cocoa Krispy Rice: https://www.postconsumerbrands.com/bran ... ocoa-rice/ (I got mine at King Sooper's)...it's gluten free
1/2 cup coconut oil
1 10 oz. package Kraft marshmallows (also gluten free)

Stir the marshmallows and coconut oil over low heat until melted. Add cocoa krispy rice and stir until well coated. Pour into 13x9x2 inch oiled pan.

Hi Jari,

Yup, truly yummy! I went to a football game party several years ago and a friend who is also GF made the DF version to bring (coconut oil) due to my dairy restrictions but she added some kind of alcohol. I can't remember what she added--maybe rum or brandy but the adult version was a big hit with virtually everyone.

Okay, it's settled. I'm going shopping today for fixin's! This sounds wonderful 😛 Thanks for sharing. I think I might even try the adult version on 1/2.

I couldn't find the Mom's Best at my Sprouts and didn't want to drive to Whole Foods so bought some Back to Nature rice crispies but not chocolate. Thought maybe if I added some Enjoy Life chips to the mix that that would satisfy the chocolate craving. I'm going to jump right on this!

Yum.....quite a few Carbs in 3/4 of a cup of rice...guess as long as one didn't indulge to bad it would feel like one was getting a normal treat huh!

Okay, one hour later and it's a done deal! I love recipes that have 3 items and that you can't mess up. I have the pan cooling in the frig, but from what I licked off the spoon I know this is winner winner chicken dinner treat. Thank you again for putting this out here today. By the way, the chocolate chips worked great. I didn't do the adult version this time . :wink:

Glad you are able to enjoy them...........I sure did! Erica, I don't worry about carbs too much anymore as I rarely eat much that has them in it.........I don't eat a lot of sweet stuff so when I do, it's not big deal!

I did the math on the Carbs....if anyone has to watch for them....1 out of a 24 piece pan Krispy treat with the recipe is close to 37 carb grams :shock: That is actually a lot!

So for my husband I cut it in half and told him if he needed to indulge then it was his choice at 18 carbs :wink:

I know that since carbs turn to sugar I am careful just because I feel too much sugar messes with my histamine levels.

BUT this was the tastiest treat ever!

Did you make this recipe? Aren't they tasty? I wouldn't make them very often, but they would be great if you needed something to take to a party or something.

Yep...made the recipe....and used Dark 69% cocoa chips....YUM

Jari, I made them according to your recipe. I got the cocoa krispies at Target. They are really good and agree with me. :grin:
