Oh my goodness, this is sooooo good! A friend sent to me.......

Homemade Paleo Chocolate

1/2 cup coconut oil
1/2 cup cocoa (I buy the organic at Costco)
3-4 T honey
1 tsp vanilla

Heat coconut oil over low heat and add in cocoa and mix well. Stir in honey and vanilla. Pour in candy molds or pie plate lined with aluminum foil. Refrigerate until solid.

Be sure to taste before pouring as it is pretty bitter if you don't get enough honey in it. Add more or less to your liking. I'm going to try it with a little bit of almond butter also.

What great minimal ingredients!

I have had powdered cocoa in my cupboard for so long, I'm probably going to have to pitch it if I ever want to try this recipe :grin:

Thanks, Jari! I buy Lindt 90% bars but I would like to make my own.
