Natrium nitrate NaNo3 yes?no?
I have found some dry pork ham which contains only NaNo3 - natrium nitrate, yes/no?

reaction to nitrates is individual
when I was flaring, I reacted to food items high in nitrates (linked to histamine issues)
now that I have resolved B6 deficiencies and my body can manage histamine levels i can consume food items that have nitrates.

as i said - reactions to nitrates is individual
not everybody reacts / has excess histamine
when there is inflammation from other items, then there is a higher chance of excess histamine.
and it also depends on what other items you have eaten that day ie how many other high histamine ingredients you have consumed / had exposure to

Here, we call that sodium nitrate. It's widely used as a food preservative. My impression is that it is not directly inflammatory for most people. But as Gabes pointed out, anyone who has mast cell or histamine problems may react adversely to it and this reaction would be inflammatory.
Histamine reactions are usually dose-dependent, so a little may not cause any problems, but too much might cause a reaction.
