Since finding this website and the advice about what our diet should look like to achieve remission I have followed very closely. I have weeks where I feel that I am making it towards remission and then I will eat overcooked vegetables and I'm back to square one. I don't mind not eating fruits and vegetables for now, but I am worried with this DF, GF, SF , veggie free, fruit free diet I am not getting all the nutrients I need.
Anyone have any knowledge on this?

what type of vegetables are you having?
how are you cooking them?
are you adding anything to them during cooking or after cooking?
for me, I have my 6 'totally safe' veges that I rotate through. then I have 3 or 4 that are sometimes veges, that I can have up to 2 serves a week of.
in any meal, I don't have any more than 4 different types of veges.

The only veggies I can tolerate are corn, carrots, celery and yellow or red potato, the other couple/few like squash cauliflower or broccoli I have to rotate, and avocado can't be over ripe and I can only tolerate a little bit of it once in a while.

Our bodies are all so different. I eat steamed broccoli, carrots, green squash, and roasted beets, sweet potatoes and white potatoes. I have just started eating cauliflower again with no problem. Prior to my LC I ate raw vegetables like there was no tomorrow. I had to hold off on the cauliflower until recently because it gave me gas (it did not give me gas when I ate it raw prior to LC.)

THanks Erica - that is my sixth one - Avocado! I had forgotten it as I have not been able to buy any the past week and it was not top of mind.
Agree Marcia. everyone here is different, so it pays to figure out what your 'safe' veges are.
A good option is to only have one, for three days - see if there are reactions.. wait a few days then try a different one etc

My veggies are green beans cooked to death, pealed yellow and green squash cooked to death, pealed carrots cooked to death, broccoli well steamed, celery in soups, avocados, and occasionally some cooked to death cabbage, and boiled or roasted red potatoes are my favorite. I have recently added canned hominy with some green chile for a special treat and doing okay with that. Sweet potatoes are okay, but not what I crave.

After 1 1/2 years of strict diet, I now eat cauliflower, Brussels sprouts, peas, carrots, asparagus, sweet potatoes, white potatoes, zucchini, and yellow squash cooked to death. Very cooked cabbage in small servings occasionally. I tried very cooked red peppers the other day, with no problems, yay. Only fruit is apples unless I'm taste testing my children's fruit for ripeness, but not every day.....
On a bad day, none of those only rice and meat....

I forgot...I am learning to eat brussel sprouts too, never liked them as a kid....maybe they weren't cooked to death Once they are cooked super soft I seem to be able to handle them ok, just not alot of them

I can eat broccoli, cauliflower, carrots, cucumber, celery, zucchini, yellow squash, acorn squash, spaghetti squash, butternut squash, hominy, bok choy, spinach, avocadoes, tomatoes, potatoes, romaine lettuce.
I can't eat green beans or peas, or any of the dried beans or lentils. They seem to be too close to soy.
I am able to eat salad-y sorts of veggies raw.
I am over 6 years into this, so I've had time to heal and be able to handle a variety of vegetables.

In the beginning I ate well cooked green beans, carrots, cauliflower, broccoli and squash. Since a lot of healing time is behind me, I can eat all vegetables, cooked or raw. I have to admit, though, that lettuce salads from a restaurant don't settle well with me. I wonder if it's because of excessive chemicals to keep them fresh.
