I have read that bananas that are more green tend to be more constipating. More ripe, with brown specs, have more sugar and can act more as a laxative.
I loved Tex's use of bananas: Peeling and freezing them, those that tend to be more green. I just bought a large bunch of greenish bananas, cut them in half, peeled them, wrapped each in wax paper and put several into a quart freezer bag. Now I can take one out at a time. Next time i might use popsicle sticks so I can take one out, dip it in almond butter or cashew butter for a snack a little more easily.

I still eat half a frozen banana (or a whole smaller one) with cashew better, as a mid-morning snack every day. I freeze them when they are just right (not green, and not a day after they have become ripe). My reason for doing this is histamine.
Bananas are a low histamine item when they are green or just turning ripe. A day later (that is, a day after they are barely ripe) they become a high-histamine food.

I peel them when they're about perfect (barely ripe) and put them in zip-loc bags for freezing. No, I put nothing on them before freezing.
No they don't change color before freezing. If you forget them in the freezer they will turn dark after a few months. I let them partially thaw for maybe 3 or 4 minutes. If you wait too long (thaw them too long) they turn to mush and you have a lot of trouble smearing cashew or almond button on top, especially if it's kind of stiff.

Tex, I took your idea for freezing bananas and do so in order to put them in my morning fruit smoothie. I'll be careful not to use over ripe bananas now.
