Food on the Camino De Santiago in Spain?
My husband and I are planning to walk the Camino de Santiago in Spain a year from now. We are training with long walks. So far I have had one flare which I treated like you all suggest. It worked perfectly. I have 2 anxieties about the trip. Food and bedbugs. This pilgrimage takes you through villages and cities via walking with a backpack. The road is about 500 miles. We plan to do it over a month. Has anyone done this? Or know about the food in Spain?

I don't know about safe food options in spain and I am trying to remember the user names of any members that are from Spain that you could contact to get direct information.
other good resources of information, are celiac forums as they have good info for travellers etc.
the main thing to look for is good protein sources that you can have in your daypacks etc. jerky products, protein powders.
if they are not available locally within Spain you may have to organise to take tested safe products with you.
regarding the bed bugs - again do some research on travel websites, you may be able to make a MC safe protector using things like coconut oil as the base, and add some essential oils etc that will provide some level of protection etc
hope this helps

Exciting! We have several Spanish members. Hopefully they can chime in.
I have not been to Spain but I suspect it is easier to eat GF on a 31 day pilgrimage across Spain than a drive around the southeast US. Generally food in Europe is much less processed than that in the US particularly the southeast of the US.
Bedbugs....we have a pretty big problem in the US. I had a friend who got bedbugs from an expensive ocean front condo on the Florida panhandle. I suspect the bedbug problem is probably worse in New York City in the ***** star hotels and Florida than northeast Spain. I'd read up on how to identify them. Bring large Hefty trash bags for each pilgrim. Put your pack in trash bag and seal bag at each accommodation. Inspect every bed upon checkin. Get refund and move on if you see the "dirt" on any mattresses. Throw your clothing out in Spain before leaving. Discard backpack in return US airport trash can. Take off final clothes you are wearing in your garage and throw out at end of trip so no clothing and pack does not come into your house at end of trip.
Be aware that folks are more likely to post their negative experiences on the internet. The thousands of pilgrims that don't get bedbugs in Spain are not posting but those that are getting bedbugs in Spain are. Again the hundreds of thousands of tourists to FL and NYC that don't get bedbugs are not posting.
