Sweet potato can be a 'cross reactor' of gluten. ie when you sweet potato the body reacts to it like it is gluten.
here is a recent discussion
I gave up sweet potato and eggs for three weeks to do a 'reset' and this worked - I can now have them without reaction

Good Lord - the harder we try to heal ourselves, the more complicated it gets! But I'm grateful for the information - knowledge is power.

Diagnosed November 2004, Used Asacol and Lialda, sometimes worked, sometimes made it worse. Entocort always works but hate it. Remission only lasts 3-6 months and then back on Entocort. Enterolab test July 2017, now gluten free. Time will tell!

So, when I didn't react to sweet potatoes the first times, and nothing happened, then the third/fourth time, my immune cells had been awakened?

If you haven't eaten a food to which you are sensitive in several years, the immune system eventually stops producing antibodies to it and "forgets that it is sensitive to it. It becomes a "new" food. When you eat it again, if you are sensitive to it, it takes several exposures for the immune system to build up enough antibodies to react.
That's why vaccines work. The first exposure (the vaccine) doesn't create enough antibodies to have a serious reaction, but if you are exposed to the actual disease later, your immune system has a head start and it can produce additional antibodies to fight the disease much faster.
