Flour substitutions of muffins

Hi all-
Thought I'd try Sheila's muffins. I am horrible at finding anything in the archives-sorry Gabes. Cant do almond flour so will be doing coconut flour and I bought both teff flour and buckwheat flour from Bob's Red Mill awhile back. Wondering if anyone has used either of these with any success. I have no idea if I react to either. It sounds like I can run these with just coconut flour but was wondering about using a little of either of the others..anyone??

Laine, a few years back I did a spreadsheet with different muffins that were posted here. It is in excel format. It may give you some ideas as to what proportions were used. If you'd like it send me a personal message and I'll send it over. Deb

I have made them with only coconut flour and they turn out just fine. I haven't used anything else though.

I've used the Pillsbury flour GF and mixed in some coconut flour and they turned out fine....although flour with out gluten in it sure isn't the same. I find it hard to figure out the right moisture to flour ratio, so sometimes I get crumbly muffins.
